Acorn-Fed Pure Iberian Ham Cinco Jotas 5J (7 kg) + Gift
This product is made from the hind limbs of Iberian pigs reared in the vast pastures of the Iberian Peninsula and fed on acorns during the Montanera fattening period.
During the production process, the ham is cooled and cut in a V shape, the outer fat is removed, then it is salted, cleaned, weighed, dried and cured in natural cellars.
- 100% Black iberian (pata negra), free-range, cured for 36+ months
- Diet of acorns and other wild plants
- Weight: 7kg
Once the acorn hams have been cured in cellars, they go through a rigorous selection process to ensure that only the best pieces, which reach the most exquisite organoleptic standards and which offer unrivalled quality, are finally chosen to bear the ‘5J’ label.
5J Ham has a lingering aroma and an incomparable taste and bouquet. A black hoof and a fine hank. When sliced, it has a uniform colour with myriad shiny streaks of accumulated fat.
Iberian Ham is a very healthy food, mainly due to the distinctive features of the breed it comes from. Its oleic acid content is one of the most important factors. This component, which can also be found in olive oil, helps to reduce cholesterol levels and cardiovascular risk.
It forms part of the Mediterranean diet and is rich in proteins, vitamins and minerals.
Another important fact about iberian ham is that it is not high in energy, which means that it is highly recommended for anyone on a slimming diet.
To keep your ham at its best, keep it at a temperature of 18ºC to 24ºC. If it must be carved a long time before it is eaten, make sure you wrap the slices in aluminium foil or grease-proof paper.
To savour its delicious flavour in the most traditional manner, we recommend you to eat it when carved in very thin slices. Ham should be carved by hand with a long, sharp knife. Only then will the sticky meat keep its qualities of taste and aroma intact, offering the palate a brief bite of exquisite pleasure. The best ham can only be tasted when it is carved correctly.
We recommend you try ham on its own with just a little bread and, if possible, accompanied by a cold, dry sherry or a good Rioja wine. The rest is up to you.
How to identify a genuine 5 Jotas Ham
Weight. The ideal weight of a cured ham is between 6 and 8 kg.
Hoof. Must be black.
Hank. This must be fine: the finer it is, the purer the animal.
“V” cut. The pelvic bone or “violin” should be cut level to the ham. On the other side, the skin must be cut in a “V” shape.
Appearance when cut. Small white dots are a sign of quality, because they confirm its low salt content and that it has been cured slowly. White streaks are positive evidence to the fact that fat has accumulated in the meat.
Fat. This must be soft, yellowing on the outside and give way beneath your finger when pressed.
Band. This surrounds the hank and guarantees that the piece is a genuine Cinco Jotas from Sánchez Romero Carvajal.
